Marinate salmon in Cindy's Kitchen Red Miso Glaze for 20-30 minutes.
In saute pan heat 1 tablespoon olive oil, add sliced shallots, saute for 2-3 minutes. Add mushrooms, saute for 5 minutes. Add spinach, reduce heat and saute until wilted. Top with fresh scallions.
Prepare quinoa to package directions
Grill for approximately 2 minutes or until it begins to lightly flake.
To serve, plate spinach, quinoa and salmon. Finish salmon with Cindy's Kitchen Red Miso Glaze, salt and pepper to taste.
