Chopped Falafel Salad with Toasted Pita Bread and Lemon Tahini Dressing

  1. Chop tomatoes, slice red onions, cube feta cheese.
  2. Peel and deseed cucumber.
  3. Combine all ingredients with spring mix, add three falafels, top with Cindy's Kitchen Lemon Tahini Dressing, chop and toss.
  4. Toast pita bread for about 3-4 minutes. Cut into triangles.
  5. Plate to serve, finish with Cindy's Kitchen Lemon Tahini Dressing to taste.
