Corn & Kidney Bean Salad with Fresh Avocado Vinaigrette

Directions

  1. Add 1 cup dark red kidney beans and 2 cups whole kernel corn to bowl.
  2. Finely chop 1/2 cup red onion.
  3. Halve 1/2 cup red cherry tomatoes
  4. Cube 1 fresh avocado, add all to kidney beans and corn mixture
  5. Finish with fresh cilantro for garnish and Cindy's Kitchen Fresh Avocado Vinaigrette, gently toss and serve
  6. Fresh squeeze half lime (optional)
