Zucchini Ribbon & Backyard Farms Tomato Salad with Balsamic Vinaigrette

  1. Using a mandolin or sharp knife, thinly slice zucchini and summer squash into ribbons. Place in bowl.
  2. Heat olive oil in a saute pan over medium high heat. Add zucchini and summer squash ribbons. Saute for 5 minutes, until slightly wilted and warm. Remove from heat.
  3. Halve cocktail tomatoes and add to bowl.
  4. Add Balsamic Vinaigrette to taste, toss.
  5. To serve, top with slivered basil and shaved parmesan.
